Tiramisu

Tiramisu is one of the most famous Italian desserts. It’s arranged in layers of savoiardi biscuits—dipped in coffee—, mascarpone cream and cocoa powder. This is a rich, creamy and sweet dessert, with coffee and Marsala balancing all the flavours. One of our all time favourites!

So easy to make, you won’t be disappointed.


Ingredients

MAKES ONE 18x15cm DISH

  • 1 pack of savoiardi biscuits (ladyfingers)

  • 250ml strong coffee

  • 5 tablespoons of Marsala wine

  • 250g mascarpone

  • 100g whipping cream

  • 1 egg

  • 85g caster sugar

  • 1 teaspoon vanilla bean paste

  • Dark unsweetened cocoa powder

Steps

  1. Prepare the coffee and let it cool down in a shallow dish. Add 2 tablespoons of Marsala wine.

  2. In a separate bowl whisk the egg with sugar until light and creamy, then add vanilla.

  3. In another bowl gently whisk mascarpone, then add whipping cream and whisk until combined. Add 3 tablespoons of Marsala and mix until incorporated.

  4. Finally, add the egg mixture and mix until smooth and creamy.

  5. Soak each biscuit in the coffee mixture for 2-3 seconds and start building the layers: Arrange the soaked biscuits at the bottom of the dish first, then add a layer of cream (use about half of the cream mix), and then sprinkle a thin layer of cocoa powder. Repeat the layers one more time (if you use a 18x15cm dish, you should end up with two sets of 3 layers. If your dish is bigger, don’t worry—you can do a single set of 3 layers).

  6. Place in the fridge for at least 6 hours (or overnight) before serving.


Tips

  • Make sure you soak both sides of the biscuits in coffee, but try to avoid them getting too soggy (if the coffee is still warm, the biscuits will soak faster, so dip them quickly). Soggy biscuits may make the dessert too wet and runny.

  • Chilling the Tiramisu for 6 or more hours in the fridge will help the flavours to develop while the biscuits soak up the moisture from the coffee and the cream mix. It will also allow the dessert to set properly before serving.

  • As described in step 5, if you are using a bigger dish, you can either make the Tiramisu with just a single set of 3 layers, or just double the ingredients in order to complete a second set of 3 layers.

  • If you don’t drink alcohol or you’re making the Tiramisu for children, feel free to skip the Marsala wine.

  • Tiramisu can be prepared a day or two before serving.
